Quick and Simple Yoghurt Cake

In the spirit of keeping things simple, I have another great recipe to share with you guys. This one is for a yoghurt cake – it requires only a few ingredients, and the method is super easy and quick. After seventy three days of spending way too much quality time with my kitchen, this is exactly what I’m looking for. 😁

Shawn and Zee say this yoghurt cake is a winner, and they’re not wrong. The texture and taste are lovely! It’s fluffy, moist and delicious; a perfect teatime treat. I’ve baked this twice in the last four days… I regret nothing. 😂

I’d love to make this for my mom once we’re able to see each other again. When it comes to cake, mom loves subtle, simple flavors (unlike me, who usually opts for chocolate decadence), so I know she would really enjoy this one.

Recipe: Yoghurt Cake

Ingredients:

  • 1 cup yoghurt (I used plain full cream) 
  • 3 large eggs (at room temperature)
  • 1/2 cup sunflower oil 
  • 3/4 cup sugar 
  • 1 – 1.5 teaspoons vanilla essence 
  • 1.5 cups flour 
  • 1.5 teaspoons baking powder

Method:

  • Beat eggs lightly with a hand mixer for 20 to 30 seconds 
  • Add oil, sugar, yoghurt and vanilla essence, and mix for 1 minute
  • Add flour and baking powder, and mix for another minute / minute and a half 
  • Pour the batter into a greased baking tin, and bake for about 50 minutes (or until a toothpick comes out clean)
  • Dust with icing sugar once it’s cooled down

Yoghurt, am I right? Turns out it isn’t just for breakfast, or two ingredient naan and pizza bases. 😁
